(RED) Tomato X Mozzarella


EAT (RED) DRINK (RED) SAVE LIVES launched on June 1st with restaurants, bars, and food trucks around the world going (RED) to raise awareness and money for the fight against AIDS. We sourced (RED) ingredients from FreshDirect to bring you super simple summer recipes including Strawberry Sangria, Watermelon Salad and Beet Carpaccio. As June comes to a close, we’re presenting our take on the Caprese Salad below:

The Goods:

Tomatoes – we combined tomatoes on the vine and mini Kumatos for different shades of (RED)

Fresh Mozzarella – any kind you prefer will do, but we went with bocconcini to mimic the size and shape of the mini Kumatos

Capers

Kalamata Olives

Shallots

Garlic

Olive Oil

Red Wine Vinegar

Salt

Pepper

Fresh Basil

The Steps:

1. Slice your larger tomatoes and arrange nicely on a plate/platter (we did concentric circles).

2. If using a ball of fresh mozzarella – slice it and alternate with the tomato slices. We just combined the bocconcini with halved mini Kumatos and scattered them in the center of the plate.

3.  Finely chop your shallots, mince your garlic, rough chop your capers and olives and combine them all with olive oil, red wine vinegar and salt and pepper – pour the mixture over the entire plate.

4. Chiffonade the basil leaves and sprinkle on top. Pinch a few of the baby leaves off the top and garnish the plate with them 🙂

5. Dig in!
